If you do not know how to properly store them for preservation, onions rot and germinate quickly.
As a result, we have to throw them away. It's a shame and it's a waste for nothing.
Fortunately, there is an incredible and easy trick to keep them longer , even for months!
The trick is to keep them in a bag with holes to keep them fresh. Watch:

1. Buy kraft paper bags like these for example.
2. Punch holes in the bags with a hole punch. If you don't have one, you can find some here.
To save time, and make several holes at the same time, fold the bag in three and make two rows of holes, as below:
3. Fill the bag halfway so that the onions have enough room, fold the top of the bag over and secure it closed with a paper clip.
4. Place your bags in a kitchen drawer or on a shelf in a closet, spacing them out so they aren't too tight. Air must be able to circulate around the bags.
There you go, this preservation method allows you to keep your onions for 3 months no problem after your harvest or having bought them at the market :-)

- Store the onions in a place as dark as possible , protected from light.
- Store them at a temperature of 18 to 20° maximum. If you have a cool cellar, this is ideal.
- Onions should not be kept in the fridge too long, because the cold softens them. Plus, they will stink up other food.
- NEVER put onions, shallots and garlic in a plastic bag , because the air does not circulate. And it accelerates germination and rotting.
- Never store onions with potatoes next to them . They both produce gas which accelerates their rotting.
- Before putting onions in the paper bags, check that they are not already damaged, especially if you buy them in a fillet. If so, set them aside to use right away. This will prevent contaminating others.
- Prefer large size paper bags, because the volume of air is thus greater. A small amount of onions in a large bag is ideal.
