Recipe for 4 people
INGREDIENTS
- 3 tbsp. tapioca
- 3 bananas
- Some red fruits
- 40cl coconut milk
- 10cl of water
- 100g cane sugar
- 1 vanilla pod
- 1 lime
PREPARATION
- Pour the pearls into a pan of water and let them cook for 8 minutes, then cool them under cold water.
- Meanwhile, heat the coconut milk with the sugar and vanilla until it reduces slightly. When the mixture is thick, stop cooking. Keep aside in a bowl with ice cubes to cool the liquid.
- Pour the drained pearls into a bowl, add the vanilla coconut milk and mix. Add some sliced bananas and mix.
- Pour the coconut milk pearls into the ramekins, add some cut red fruits and grate the lime on top.
