INGREDIENTS

  • 3 tbsp. tapioca
  • 3 bananas
  • Some red fruits
  • 40cl coconut milk
  • 10cl of water
  • 100g cane sugar
  • 1 vanilla pod
  • 1 lime

PREPARATION

  • Pour the pearls into a pan of water and let them cook for 8 minutes, then cool them under cold water.
  • Meanwhile, heat the coconut milk with the sugar and vanilla until it reduces slightly. When the mixture is thick, stop cooking. Keep aside in a bowl with ice cubes to cool the liquid.
  • Pour the drained pearls into a bowl, add the vanilla coconut milk and mix. Add some sliced ​​bananas and mix.
  • Pour the coconut milk pearls into the ramekins, add some cut red fruits and grate the lime on top.
