What could be better than a good cheese to accompany an Italian speciality? Gorgonzola and parmesan will be perfect to enhance your gnocchi. To cook your cheese sauce for two people, you will need:
– 1 shallot;
– 1 block of semi-thick cream;
– grated parmesan or gorgonzola cheese.
Start by boiling your gnocchi. Meanwhile, finely chop the shallot and brown it in a tablespoon of olive oil. Once the shallot begins to color, lower the heat and cook the cream. To make a tomato sauce worthy of Italian mamas, you will need to be patient! A good tomato sauce must, in fact, simmer over low heat for hours. The more it cooks, the more the aromas will develop and the better it will be. For two people you will need:
– 1 onion;
– 1 carrot;
– 1 clove of garlic;
– 4/5 very ripe tomatoes;
– oregano;
– basil.
Peel the tomatoes, cut them into small pieces and set aside. To make it easier for you, you can scald them, the skin will then peel off on its own. In a pot, sauté the chopped onions with a little olive oil. Once they have taken on a nice color, add the carrots, previously cut into julienne. Lower the heat to low and throw your tomatoes into the pot. Salt, pepper and spice with oregano and basil. The sauce must cook for at least 1 hour, the longer it simmers, the better it will be. For even more indulgence, you can coat your previously cooked gnocchi with the sauce, add parmesan and broil the dish for a few minutes in the oven.
