Vegetable soup is super easy to make! Choose all the vegetables that make you want, trying to take vegetables that go well with each other. Carrots, cabbage, leeks, onions, potatoes go very well together and will give a creamy and sweet soup. First cook your vegetables with butter and then when they are all softened, add water. The dose is not precise, the water should just cover all your vegetables. Bring to a simmer then mix everything together with an electric mixer. Your soup is ready!
For your pumpkin soup you will only need a quarter of the vegetable! Enough to do several times with the rest! Cut it into small pieces and fry them in a pan. Add water to cover all the pieces, then simmer until the vegetable is soft. Add fresh cream, salt and pepper and mix everything. If you like ground nutmeg, add a few pinches. Parsley also seasons this soup very well.
Onion soup is quick and easy to prepare, but requires quite a long cooking time. So plan a little more time to make it than for the previous recipes. Cut 5 onions and slice them. Fry them in a pan with butter and a little oil. Let them brown over low heat for about ten minutes. Add a tablespoon of flour and mix well. Add 25 centiliters of white wine and about a liter of water and bring everything to a boil. Add two chicken broths to give flavor. Let simmer over low heat for 20 minutes. Arrange a slice of toast and grated cheese in the bottom of bowls and fill them with soup, then add cheese on top. Put them in the oven to brown them.
