Asparagus season fresh is officially open! From April, this spring vegetable sits proudly on the stalls of greengrocers until June. Whether it is the white, green or purple variety, asparagus delights gourmets thanks to its delicate and refined taste, a hint of sweetness that often reminds of hazelnuts, and its ultra-melting texture in the mouth. Moreover, the benefits of asparagus on health are no longer for sale, so much so that you can eat them without moderation. To honor it in the kitchen, you can prepare a mixed salad , a asparagus flan with parmesan and almonds or a creamy green asparagus risotto .
Asparagus is delicious yes, but preparing it is a whole other story. Often we peel them badly, we miss the cooking and in the mouth the taste is quite different. To remedy this, chef Cyril Lignac has its tips . Recently on RTL he revealed how to cook crunchy and tasty asparagus . The first step is cooking :pour your asparagus in a large volume of boiling salted water for 8 to 15 minutes depending on their size. To stop the cooking and keep their color, plunge them into a tub of ice water. Then, the secret is the seasoning , prepare a special vinaigrette with, why not, olive oil, curry and white balsamic.
