Requirements:
100g of fresh white Mediterranean fish fillet (Umberfish, sea bass, mahi-mahi, etc)
Juice of half a lime
Malden sea salt
2 tbsp Extra Virgin olive oil, light and fruity
Grated lime zest (½ lime)
Fresh chilli (mild) – to taste
1 tbsp lightly toasted pine nuts
1 tbsp lightly toasted pistachio
6-7 fresh oregano leaves
2-3 basil leaves
Preparation method:
1. First, choose a nice flat plate;
2. Then cut the fish into slices of 0.5 mm and spread them on the plate;
3. Sprinkle salt over the fish (be generous, fish love that) and drizzle with olive oil;
4. Then shave the lime zest over it and cut the fresh chili into wafer-thin slices (to taste);
5. Then divide the pine nuts, pistachio and fresh oregano leaves over the dish;
6. Finally, cut the basil into fine hairs and divide it over the dish.
