Recipe:Miso ramen with bok choy

Miso ramen is a hearty dish with a long Asian tradition and a recipe that is not only incredibly tasty and healthy, but also easy to imitate and guaranteed to impress family and friends.

Ingredients for 2 persons

1 clove of garlic
6 shiitake mushrooms
100 g pak choi
1 spring onion
3 tbsp sesame oil
3-4 tablespoons soy sauce
500ml water
2 tablespoons dark miso paste
120 grams of ramen
1 tbsp toasted sesame seeds
1 ramen egg

Preparation:

  • Peel the garlic and chop finely. Clean mushrooms and cut into strips. Clean the pak choi, wash, drain and cut into strips. Separate the green and white ends of the leaf. Clean the spring onions, wash, shake dry and cut into rings.
  • Heat sesame oil in a pan. Fry the garlic together with the mushrooms and the white end of the pak choi for 5-6 minutes. Deglaze with 1½ tbsp soy sauce and set aside.
  • Bring 500 ml of water to the boil, dissolve the miso in it and season with the remaining soy sauce.
  • Prepare noodles according to package instructions.
  • Pour the miso into bowls and garnish with noodles. Divide the mushroom-bok choy mixture, green bok choy leaves and spring onions over the soup. Halve the ramen egg, add to the soup, sprinkle with sesame and enjoy.
