Preparation
Cook the lentils in a saucepan containing 2.5 times their volume of cold water . Add the onion studded with 2 cloves, the thyme, 2 bay leaves, salt and pepper. Bring to a boil and partially cover the pan. After 20 to 25 minutes of cooking time, the green lentils are cooked.
Remove the bay leaf, thyme and cloves stuck in the onion. Slice the onion that you put back with the lentils. Add 2 tablespoons of Dijon mustard and simmer over low heat, turning regularly so that the lentils do not stick to the bottom.
In a pan of simmering water, cook the smoked sausages for 10 to 15 minutes depending on the case. Then add them to the lentils.

N.B.:a variant consists of replacing the smoked sausages with smoked bacon bits which must be sautéed before adding the cooked lentils and mustard.
