Fortunately, I found this delicious recipe in my favorite cookbook.
It's a seasonal vegetarian recipe, super easy to make and only takes 10 min to prepare.
It is simply delicious and everyone loves it!
Here is the easy and inexpensive recipe for roasted butternut squash with lentils and gorgonzola . Watch:

- 1 butternut squash
- 2 red onions
- 10 g of sage
- 3 tablespoons of olive oil
- 100g lentils
- the juice and zest of a lemon
- 1 clove of garlic
- 10 g of aromatic herbs (parsley, mint, tarragon...)
- 100 g gorgonzola
- salt and pepper
Preparation: 10 mins - Cooking: 35 mins - For 4 people
1. Preheat the oven to 220°C.
2. Wash the butternut squash, cut into 1 cm thick slices. No need to peel off the skin! However, remove the seeds from the squash.
3. Peel the red onions and cut them into 3cm wedges.
4. Put everything in a salad bowl.
5. Pour two tablespoons of olive oil, add 3/4 of the salt, pepper and sage leaves.
6. Mix and pour everything on a baking sheet lined with parchment paper.
7. Bake for 25-30 mins.
8. Meanwhile, cook the lentils according to package directions, then drain and let cool.
9. Take the squash out of the oven and let cool for 10 minutes.
10. Put the lentils in a bowl. Pour in the lemon juice, add the lemon zest, the herbs, the garlic, a spoonful of olive oil, the rest of the salt and mix gently.
11. Add the sliced squash and onions. Mix gently and put everything in the serving dish.
12. Add the gorgonzola cut into pieces, a drizzle of olive oil and serve.
There you go, your roasted butternut squash with lentils and cheese is ready to eat :-)

In my house, everyone loves this gourmet recipe. I have prepared it several times and the success is always the same.
- Don't worry if you don't have all the herbs:take what you have! And better yet, pick the ones you like best. I never use the same herbs and it's a new recipe every time! And even without sage, this dish remains excellent.
- If you don't have gorgonzola, you can use Roquefort cheese. This cheese with a strong taste highlights the sweet flavors of the butternut.
- You can cook lentils and butternut squash ahead of time. When it's time to eat, all you have to do is add the seasonings, the cheese, a drizzle of olive oil and warm everything up for a few minutes in the oven. Handy, isn't it?
