Cutlet breaded brains with lettuce and radishes

Beat the egg yolks with the oil drizzled to make a mayonnaise. Then stir in the buttermilk and season with salt and pepper, lemon juice and raspberry vinegar.

Wash lettuce, radishes, tomato and chives. Cut the radishes into strips, peel the tomato, deseed it and cut the flesh into diamond shapes. Chop the chives.

Cut slices of brains 1 cm thick, salt and pepper them. Finely grate the bread, beat it with the egg yolk and coat the brain slices with this breadcrumb.

Strip the lettuce and dress it with buttermilk mayonnaise. Arrange the salad on plates with the tomato diamonds, radishes and chives.

Bread the brain pieces on each side in the clarified butter, sprinkle with a little lemon juice and arrange on the salad.
