Snow pea ragout with rolled belly and Basque spices

Cut the belly into small cubes, chop the onions, peel and crush the garlic, chop

In a skillet put the olive oil, brown the belly and the chopped onions, add the garlic and the snow peas with half a liter of meat juice and cook over low heat for 10 minutes, season with salt and pepper, arrange the drained gourmet peas in a circle in the center of the plate.

Don't despair if you can't find a belly rolled with Basque spices, a good rolled breast will do.
