Verrines of cuttlefish and prawns in marinade

  • shrimp
    300 g
  • prepared cuttlefish
    1 kg
  • tomatoes
    350 g
  • red onions
    2
  • purple garlic
    4 cloves
  • fresh white onion

  • Espelette pepper powder
    2 pinches
  • sweet paprika
    2 pinches
  • fresh ginger
    10 g
  • soy sauce
    1 tablespoon
  • nuoc man sauce
    1 teaspoon

Mince the cuttlefish whites, cook them in boiling salted water with a little vinegar, drain, leave to cool, put in a flat container.

Mince the prawns, add them to the cuttlefish

Chop the red onions, as well as the white ones with their green stems,

Peel and crush the garlic cloves, degerm them and chop.

Peel and finely dice the ginger

Add these 3 elements with the cuttlefish and prawns

Then add all the remaining ingredients

Drizzle with olive oil, salt with coarse salt and lightly pepper.

Film and refrigerate (if possible the day before) for at least 3 hours.

Dish up in verrines, garnish with flat-leaf parsley leaves and serve immediately.
