Mix the mangoes and star fruit and chill.
Purée the ginger with the olive oil, vinegar, lime juice, mustard, cilantro, green onion, salt and pepper, in the bowl of your food processor blender until smooth. obtaining a creamy consistency.
Arrange the two fruits on a plate and spread the vinaigrette over them.
