Peel, finely chop the shallots, blanch quickly, put in a container with:olive oil, lime juice, crushed green pepper, salt and pepper. Leave to marinate for fifteen minutes.
Pass the beef through a slicer and arrange the slices of meat flat on the plate, cover with a thin layer of marinated shallots, sprinkle with chopped chives.
Accompany with a small salad of young shoots.
