Duo of trout tartare


Ingredients:4 people
  • smoked trout
    2 nice slices
  • fresh trout
    1 of 400 g
  • lemons
    2
  • olive oil
    4 tablespoons
  • salt and ground pepper

Cut the smoked trout slices into strips. Line the edges of four ramekins with it.

Using a very sharp knife, cut the fresh trout into small cubes. In a bowl, add lemon juice and olive oil. Salt and pepper from the mill. Fill the ramekins with this preparation, then pack lightly. Put them for 30 minutes in the refrigerator.

Unmold just before serving. You can serve with chopped green salad or finely chopped raw vegetables (small radishes, cucumber, celery, fennel etc).

You can also make this recipe by replacing the trout with smoked salmon and fresh salmon.
