Rinse, dry and hull the strawberries. Mix 100 g. Pour this puree into a bowl. Mix in a squeeze of lemon, sesame oil and 2 pinches of gomacio, whisking with a fork. Season with pepper.
Slice the remaining strawberries as well as the flesh of the avocados and the onions.
Pour a bead of strawberry vinaigrette on a dish. Scatter the arugula leaves. Place the drained burrata in the center. Split it into four. Surround with strawberries, avocados and spring onions. Sprinkle the rest of the strawberry vinaigrette here and there and serve.
Note:Burrata is an Italian cheese made from mozzarella with a creamy heart, originating from Puglia.
