Preparation
Melt the 30 g of butter in a high-sided casserole dish, slice the onion and brown it in the butter. Slice the Iceberg lettuce, wash it, wring it out, pour it over the onions and cook gently; add a little water if necessary (cook it melting). Remove from the heat and cool by dipping the bottom of the container in cold water for rapid cooling.
In a small salad bowl break the eggs, add the fresh cream, the pepper, the nutmeg and beat this mixture. Add it to the cold cooked salad and mix well. Add the pork lardons, the slices of cooked pork shoulder cut into small pieces. Mix gently, check the seasoning.
Take a 33 cm diameter pie pan, place parchment paper at the bottom and, on top, the pastry sheets staggered to form a border. Place your preparation on the brick sheets.
Grate the cheese over it and put in the oven at 180 degrees for 20 minutes. Check the cooking:the cheese must be well melted, slightly golden.
Observations
The tart can be eaten as a main dish for 4 people with a salad of endives and fresh tomatoes or 6 people as a starter. Another way to eat salad (quiche style) but nothing to do with a quiche!
