Tabbouleh of sardines with pearl onions

  • durum wheat semolina
    250 g
  • tomatoes
    500 g
  • cucumber
    200 g
  • baby onions
    250 g
  • lemon
    1
  • Olive Oil
    60g
  • mint
    1 boot
  • chopped curly parsley
    300 g
  • fresh sardines
    400 g
  • fresh cilantro
    50 g
  • salt, ground pepper

Pour the semolina into a bowl, moisten with 1 bowl of boiling water, little by little to moisten the grains without soaking them, let stand.

Add the diced tomatoes and their juice, the finely chopped onions, then the chopped fresh mint and the chopped parsley, too.

Salt and pepper of high taste.

Moisten with olive oil, lemon juice, then add the cucumber cut into brunoise, let rest and mix the composition, add the boneless sardine fillets and cut into large brunoise.

Arrange in a circle on the plate, garnish with lemon zest and chopped fresh coriander
