Preheat the oven to 200°C.
In a mortar, pound together:pink peppercorns, Sichuan seeds and coarse sea salt, until you obtain a powder.

Sprinkle the mortar powder, chopped tarragon and Provence herbs on top.

Pour a drizzle of olive oil over the fish.
