Prepare the peach butter by blending the blanched and pitted peach, the butter and the ground almonds in a mixer.
Reserve in the refrigerator.
Cut the bread into slices about a centimeter thick. In a frying pan put the 80 g of butter, brown the slices of bread on each side. Book.
Peel and pit the peaches by cutting them in half. Put the water in a saucepan with the sugar and the vanilla pod split in two laterally. Boil and delicately poach your half-peaches in this syrup, drain them.
Place half a peach on each slice of bread, arrange in a dish and spend a few minutes in the oven. Put a little syrup in a small saucepan, bring to the boil and winnow off the heat, incorporating the peach butter with the almonds.
Remove the baskets from the oven and coat with almond peach butter.
