A Zucchini Pasta Recipe for Less than €0.40 per Person!

Ingredients

For 4 people

- 500 g pasta, penne style or spaghetti

- 450 g frozen or fresh zucchini in season

- 1 clove of garlic

- Olive Oil

- Salt &pepper

Preparation

1. In a large volume of salted water, cook the pasta for 8 to 10 min (for pasta al tooth , no more than 8 min).

2. Meanwhile, put the frozen or fresh zucchini pieces in boiling salted water for 5 minutes. 2 or 3 min is enough if they are fresh.

3. In a skillet, brown the finely chopped garlic with a drizzle of olive oil.

4. Take the zucchini out of the water and drain them.

5. Do brown the zucchini in the oil so that they are well grilled.

6. Pour the pasta into the skillet. Mix, salt and pepper.

7. Let simmer for 2 minutes over low heat.

Result

There you go, your zucchini pasta is ready to eat :-)

It is a convivial and economical dish costing €0.35 for 1 person or at 1.43 € for 4 guests :-)

- 500 g of pasta, "penne" style:€1.24 per kilo, i.e. €0.62

- courgettes:around 450 g at €1.70 per kilo, i.e. €0.81

Bonus tip

A Zucchini Pasta Recipe for Less than €0.40 per Person!

Serve on plates with mozzarella shavings.

You can also sprinkle parmesan on top of the preparation, while adding a drizzle of olive oil.

You can also add pine nuts or basil.

For a change, you can replace the mozzarella or parmesan with feta, and the basil with mint.
