My inexpensive recipe of the week at less than two euros per person.

My recipe for less than two euros this week:crispy goat cheese .

Here is my adaptation of this vegetarian recipe that is really easy to make and perfect for a summer lunch.

Ingredients for 4 people:

- 4 brick sheets

- 200g baby spinach

- 1 log of fresh goat's cheese

- Thyme

- 15g of Honey

- Salt and Pepper

- Olive Oil

To save time, I preheat my oven to 200 degrees before starting the preparation.

Then, I cut the pastry sheets in 2 and brush them with a very thin layer of olive oil. The best is to use a brush so as not to put too much fat.

I then cut the goat cheese into slices 1cm thick and place one on each strip of brick. I brush with a little honey, salt and pepper and place a dozen spinach leaves on top, which will melt when cooked. I add a pinch of thyme.

The last stage of this preparation is folding. Nothing really complicated, just fold it up like an envelope or a triangle.

Bake for 5 minutes, until browned and crispy.

The chef's little tip, if you want to vary the pleasures, you can replace the honey with dried tomato jam and add Bayonne ham.

All you have to do is put them in a large mixed salad. Here you are with good original goat cheese bricks to enjoy with your friends.

Savings Achieved

I love this recipe, it's good, it takes 10 minutes and it's really cheap.

For a little less than 2 euros per person, I have a great goat cheese salad.

It's perfect when the good weather returns, for a light meal in the heat of spring.
