1. For each recipe, mix all the ingredients with a whisk, or even simpler, put them in a jar and shake.
2. To store your vinaigrettes, I recommend using squeeze bottles like this one, or also this surprising vinaigrette shaker, which I always have at hand when I cook.
- 18 cl of oil (olive oil or rapeseed oil)
- 6 cl of vinegar (white wine vinegar, red wine vinegar, balsamic vinegar or cider vinegar)
- 1 teaspoon of garlic (fresh or dehydrated)
- 1 teaspoon of dried basil
- 1 teaspoon of oregano
- Season according to your taste with salt, pepper, onion and paprika
- Optional: grated parmesan, lemon juice, sugar and honey
- If you use fresh herbs, double the quantity.
- Adjust the amount of vinegar according to your taste. Me, I'm a big fan! So I prefer a 50% oil and 50% vinegar mix, but most people find that a bit too sour.
- Mild ingredients like honey and sugar help tone down the acidity of the vinegar, which makes the dressing even more delicious for many people.
- If you're using ingredients that don't need to be refrigerated (dried rather than fresh aromatics), you can store your dressing at room temperature for several weeks.
- If you refrigerate your vinaigrette, the oil can sometimes solidify (especially olive oil). If so, take your vinaigrette out of the fridge about 10 minutes before preparing your salad, then shake the bottle well.
- 12 cl of olive oil
- 12 cl of balsamic vinegar
- 1 teaspoon of garlic (fresh or dehydrated)
- 1 teaspoon of mustard
- Salt and pepper according to your taste
- Optional: honey, brown sugar or herbs
- Purée a handful of fresh strawberries or raspberries with your blender. Once well liquid, add them to your balsamic vinaigrette. The result is a delicious fruity salad with summer flavours.
- 60 g of mustard
- 85 g of honey (adjust the quantity according to your tastes)
- 60 g of mayonnaise or 6 cl of oil (vegetable oil or olive oil)
- 1 to 2 teaspoon(s) of vinegar (white vinegar, cider vinegar or lemon juice)
- Season according to your taste with salt, pepper, garlic, paprika or cayenne pepper
- For a runnier dressing, use oil instead of mayonnaise, or a mixture of the two.
- Use Dijon mustard, but you can mix it with a less strong mustard if you wish.
- Start with a small amount of honey and add more to taste, as some people don't like a dressing that's too sweet.
- This dressing is also a perfect sauce for dipping chicken drumsticks! Yummy !
- 12 cl of oil (peanut oil, rapeseed oil or vegetable oil)
- 6 cl of soy sauce
- 7 cl of rice vinegar
- 1 to 2 tablespoon(s) of fresh ginger
- 2 tablespoons of sesame oil
- 1 teaspoon of garlic
- 1 tablespoon of sesame seeds (lightly toasted)
- Optional: honey, spring onion, salt, pepper or cayenne pepper
- If you use peanut oil, be aware that your dressing will have a strong peanut flavor (it makes sense). I love this taste, but not everyone likes it! If so, substitute another vegetable oil.
- This dressing is even more delicious if you use fresh ginger and garlic. But if you don't have any on hand, you can also use dehydrated ingredients.
- I buy sesame seeds that are already roasted. But if you don't have any, you can simply grill them over low heat in a pan, with a little butter or oil.
- If you don't watch your sugar intake, honey is a great addition to this dressing recipe.
- 150 g of strawberries
- 2 to 3 tablespoons of vinegar (balsamic vinegar, rice vinegar, red wine vinegar or white vinegar)
- 12 cl of oil (olive oil, rapeseed oil or a mixture of oil and Greek yogurt)
- 2 teaspoons of poppy seeds
- Sweeten according to your taste (sugar, honey, stevia or agave syrup)
- Season according to your taste with salt, pepper, ginger, garlic, mustard or lime
- Purée the strawberries using your blender or food processor, until it makes a liquid mixture.
- If you watch your sugar intake, you can replace it by adding a little more strawberries.
- I advise you to use a mixture of oil and Greek yogurt. The yogurt will bring a slight touch of acidity and more smoothness to your vinaigrette, a real treat!
