I don't know about you but I love Swedish meatballs from IKEA!
But there's no question of going to IKEA every time I want to eat the famous köttbullars!
So I tested several Swedish meatball recipes.
And this is definitely my favorite! Kids love it too.
But who could resist these succulent little meatballs and their delicious creamy and smooth sauce?
I'm sure you too will succumb! So here is my recipe for homemade Swedish meatballs . Watch:

- 500g minced pork
- 100 g breadcrumbs
- 2 or 3 tablespoons of chopped parsley
- 2 shallots, minced
- A pinch of ground nutmeg
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of white pepper
- 1 teaspoon of salt
- 1 egg
- 60g clarified butter
- 15 g of flour
- 350 ml hot beef stock
- 100 ml hot milk
- 100 ml liquid cream
- 15ml Worcestershire sauce
- 1 tablespoon of Dijon mustard
1. In a large bowl, combine the meat, breadcrumbs, half the parsley, pepper, nutmeg, white pepper, a shallot, salt and the whole egg.
2. Mix the ingredients well to obtain a homogeneous mixture.
3. Scoop out a generous amount of meat and form balls with your hands.
4. Heat a skillet over medium heat.
5. Put 20 g of butter in it.
6. Put the meatballs in the pan and brown them on all sides. Meatballs should be barely cooked.
7. Set them aside on a plate.
8. Add the rest of the butter to the pan.
9. With a spatula, scrape the bottom of the pan to loosen the pieces of grilled meat.
10. Add the flour and mix with the butter to obtain a roux.
11. Let heat for 2 or 3 min.
12. Slowly pour in the beef broth while whisking the sauce. Keep stirring until the sauce thickens.
13. Add the milk and continue mixing. The sauce will thicken further.
14. Stir in mustard and Worcestershire sauce.
15. To finish, pour in the cream and mix.
16. Return the meatballs to the skillet full of sauce and cook for 10 minutes.
17. Sprinkle with the rest of the parsley.
There you go, your homemade Swedish meatballs are already ready :-)
Easy, quick and delicious, right?
It's much better than Swedish meatballs from Picard or IKEA!
I like to serve them with noodles, sautéed spinach or potatoes.
And of course, I accompany everything with the famous cranberry jam.
I can tell you that the whole family loves it! Besides, I never make enough... So don't hesitate to double the quantities.
- You can replace pork with beef or a beef/pork mix.
- You can also cook your meatballs in the oven at 200°C, instead of cooking them in a pan.
- If you're using a pan, you may need to cook them in batches so you don't get too much in the pan each time.
- I added parsley but nothing prevents you from choosing other herbs that you like. Personally, I sometimes add marjoram.
- If you find that your sauce is not salty enough, you can always add more salt. But I find that between the dumplings, broth and Worcestershire sauce, there is already enough salt.
- If you prefer, you can use more digestible clarified butter and unbleached flour.
- Another variant also consists of replacing the classic breadcrumbs with Panko breadcrumbs and the pepper with allspice. Your meatballs will be even tastier and their texture will be more crispy!
