This pulled jackfruit sandwich from Lenna Omrani's cookbook The Every Day Vegan has that perfect sweet and sour, smokey taste you expect from a pulled 'pork' sandwich.

500 g canned young jackfruit, drained weight
1 tsp smoked paprika
1 tsp cumin powder
1 tsp curry powder
100 ml vegan BBQ sauce
1 tbsp olive oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
salt and pepper
4 sandwiches of your choice
1 apple, thinly sliced
100 g fresh red cabbage, in strips
Garnish (optional)
Fresh coriander
Preparation
- Preheat the oven to 180°C.
- Pull apart the jackfruit pieces with your hands. Then rinse the jackfruit pieces very well with cold water. Then put them in a bowl.
- Add the smoked paprika, cumin powder, curry powder and BBQ sauce and stir well. Cover the bowl with plastic wrap and set it aside. This way the herbs are absorbed well.
- Heat the olive oil in the frying pan and fry the onion and garlic for about 3 to 4 minutes.
- Add the jackfruit mix and fry for 5 minutes on medium heat. Stir regularly. Add salt and pepper to taste.
- Divide the contents of the pan over the baking dish and bake the jackfruit mix in the oven for about 7 minutes.
- Cut open the sandwiches and top them with the BBQ jackfruit mix. Divide some strips of apple, red cabbage and possibly fresh coriander over it.
