Do you have a drying oven or an oven that can be set at a low temperature? Then make a powder of black olives, with which you can enrich various dishes. Olive powder is a good substitute for salt.
Drain a small jar of black olives, these must be olives in brine (not oil) and dry them at 65°C for 12 hours (or until they feel dry to the touch). Another option is to dry the olives for 3 hours in a regular oven at 90 °C. Let the olives cool and grind them into powder in the blender.
You only need a little bit of powder to flavor your dish. You can store the powder in the refrigerator.
