This pizza with figs also works well on a serving board. Keep in mind that the dough that you make fresh has to rise several times.
For 4 pizzas

1. Dissolve the yeast in the lukewarm Almond Oat drink and lukewarm water. Set aside and let it rest for 10 minutes. Mix the flour with the salt using a food processor. Then add the rice drink/yeast mixture and the olive oil. Knead the dough into a ball. Sprinkle the dough with some flour. Put the dough in a bowl. Cover with plastic wrap. Let rise for 1 hour at room temperature.
2. Degas the dough. You can remove the excess gas by punching the dough with your fist. Then let the dough travel for another 30 minutes.
3. Divide the dough into 4 pieces and make into balls. Cover them with plastic wrap. Set aside for 10 minutes. These balls of pizza dough will rise a bit. Roll out the dough as thin as possible using a rolling pin.
3. Preheat a grill. Brush the pizza bases on both sides with some olive oil. Grill them for 4 minutes per side. Brush the tops of the pizzas again with olive oil. Sprinkle with rosemary and pili pili flaked. Garnish with figs, pancetta and arugula.
4. You can sprinkle some balsamic cream over it for a fresh and sour touch.
