Well, how can you best describe whoopies? Whoopies are not a cake, nor are they cookies. They are actually small pastries with a delicious cream filling that originated in America. Normally only round shapes should be referred to as whoopies, but it's hard to arrive for Valentine's Day with a trite round shape. That's why I took the liberty of modifying the shape as I saw fit.

  • 500 grams Flour
  • 2 teaspoons cocoa powder
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 120 grams Butter unsalted (room temperature)
  • 250 gram caster sugar
  • 1 large Egg
  • 125 ml Buttermilk
  • 30 ml Red Food Coloring
For the filling
  • 250 grams Cream cheese
  • 75 grams Butter unsalted (room temperature)
  • 2 teaspoons Vanilla extract
  • 625 grams Powdered sugar (sifted)
Preparation This is how you make the whoopie hearts
  1. Place the flour, cocoa powder, baking powder and salt in the bowl and mix the dry ingredients together.

  2. In the other bowl, beat the butter and brown sugar on medium speed until creamy, about 2 minutes.

  3. Then add the egg and vanilla extract and make sure that the sides are also scraped regularly, so that it becomes an even batter and all ingredients are mixed evenly

  4. Now 1/3 of the dry ingredients is added and stirred

  5. Take half of the buttermilk and stir it well into the batter

  6. Repeat steps 4 and 5

  7. Finally, add the remaining dry ingredients and the food coloring

  8. NOTE:the batter should not be mixed too much

  9. Draw hearts on the baking paper. Keep in mind that the dough will spread out a bit, so make sure there is sufficient distance between them. You will probably have to make two baking trays. The hearts should be visible on the back as you turn the parchment paper over so you don't get pencil-edged whoopies.

  10. Fill the batter into the piping bag and pipe it into the heart shape on the baking paper (not exactly on the edge, but leave some space so that the cookies can expand

  11. Preheat the oven to 190°C and then bake the whoopies until tender (about 10 minutes)

  12. Let cool completely before removing the whoopies from the baking paper

  13. Meanwhile, prepare the cream cheese filling

Make filling
  1. Beat the cream cheese and butter until creamy

  2. Add the vanilla extract and mix well

  3. Add the icing sugar little by little, while you keep mixing and the icing sugar is fully incorporated

  4. Spread a generous layer of filling on one cookie and cover with another cookie. If desired, you can decorate the top with sugar mice.
