If we (read:me) don't feel like cooking at the weekend, then hubby throws his cooking skills on the table with a delicious recipe for vegetable soup. All too often they claim that they "cannot cook", our men. But if you let them have their way in the kitchen, it turns out that nothing is right. This is apparent every time it is Frank's turn to make soup. One of his favorites is his vegetable soup recipe. Easy to make, and the kids love it too, just like the bell pepper soup with tomatoes.

At our house, we like to make a tasty vegetable soup with this recipe, if the program goes a bit wrong. Add quite a few vegetables, add bread, and you have eaten delicious and still quite healthy. Frank's vegetable soup recipe certainly fits into this category. An ideal meal for (too) busy days!

Recipe for vegetable soup a la hubby

The recipe for vegetable soup a la hubby is easy to make, and ready quickly. Just the way men (and me!) like it. Below you can read what you need to make the soup. But it's 'just' our vegetable soup recipe; you can of course throw in anything you like!

Ingredients

  • 1 liter of water
  • 3-4 maggi beef stock cubes
  • Large bag of frozen soup vegetables (farmer's soup vegetables)
  • Medium curl vermicelli
  • Soup dumplings (optional)

This should be enough for 4 people, below you will find the preparation for this vegetable soup recipe.

Preparation method

  • Set up water with the stock cubes.
  • Stir until the stock cubes are completely dissolved.
  • Bring the water to the boil and add the frozen soup vegetables while you are cooking. Let it cook for 5 minutes.
  • Add curled vermicelli and let it cook for a total of 10 minutes.
  • If you also want to add soup balls, you can of course add them in the meantime (at the same time as the vermicelli). Since I am vegetarian, we skip the balls

Oh yes:as a variation we sometimes do this with cauliflower. I personally find cauliflower soup a lot better than cauliflower with potatoes. Or make a tasty onion soup with onion, where I first fry the onion in a pan. The broccoli soup with bacon is also a favorite here.
