Cauliflower rice with meatballs in tomato sauce

Cauliflower Rice. I've heard about it before, but hadn't tried making it myself before. Last week I made a celery salad that had cauliflower rice in it (really delicious!), where I just added the cauliflower rice raw. This time it's cauliflower rice with meatballs in tomato sauce. And I can tell you… it's worth it!

Why cauliflower rice instead of regular rice?

Simple, it's two birds with one stone.

  • Less carbohydrates because I replace regular rice with cauliflower rice.
  • More vegetables on our plate without the children noticing.
  • Eating with a small bite.

Cauliflower rice with meatballs in tomato sauce

And because the recipe turned out to be so successful, I wrote it out for you 😉 .

Ingredients

For the cauliflower rice

  • Cauliflower rice (± 700-800 grams)
  • Garlic, 3 cloves
  • Coriander (5 grams)

For the meatballs in tomato sauce

  • Pack diced tomatoes with garlic
  • Coriander (5 grams)
  • 2 onions
  • (Indian spiced) meatballs (as needed, I use about 400 grams)
  • Small can of tomato paste (70 grams)
  • Teaspoon of Ras el Hanout

Preparation method

For the cauliflower rice

Saute garlic in a wok with some oil. Then fold in the cauliflower rice on medium-high for 3 minutes. Just add the coriander at the last minute.

How to prepare meatballs in tomato sauce

Fry the meatballs in some butter. Add onions and fry for a while. Add tomato paste and stir gently. Then add the diced tomatoes, the coriander and the Ras el Hanout

Particulars for the recipe cauliflower rice with meatballs in tomato sauce

I use ready-made cauliflower rice that I get from the greengrocer. I have not yet found cauliflower rice on the shelves at the Plus, but the Albert Heijn seems to have it. You can of course also make the cauliflower rice yourself, see below. But I try to make it a little easy on myself -as a working mother- every now and then 😉 .

Of course, these meatballs in tomato sauce can also be eaten with rice, but because of the carbohydrates I prefer to do it differently.

Make your own cauliflower rice?

Do you have more time and do you want to make the cauliflower rice yourself? This is very easy if you have a food processor or hand blender.

Cut a cauliflower into equal pieces (without leaves of course). Of course you can also just use the stumps. Put them in a food processor and add some water. Blend briefly with a pulse function and you have cauliflower rice. Not too long because then you run the risk of puree 😉 . Pour over in a colander so that all the water drains away and you're done.
