You may think that this is a real winter recipe, but to be honest, it's not that bad. I can eat chili con carne from the slow cooker all year round. Well, maybe not in high summer, but certainly in spring and autumn.
What do you need for the chili con carne? You can partly determine that yourself, but I will indicate what I do through it. That also changes from time to time, sometimes it's just what I have at home. But I do have basic ingredients for the chili con carne in the slow cooker, so I'll definitely give those to you.
But of course you can also add a leek, extra onions, carrot, celery or zucchini. It doesn't really matter that much, but do add a lot of vegetables. Not only is that very healthy, but it also makes the chili con carne from the slow cooker tasty. You can also use up your leftovers, which is ideal!
It is also relatively easy to make. First you fry the minced meat in the pan, you don't need butter for this because minced meat contains enough fat. Just stay with it for the best result.
Once your mincemeat has been cooked, put it in the slow cooker. Add all the vegetables and mix in the garlic and herbs. Add a dash of balsamic vinegar and you're done. Let the slow cooker do the rest of the work.

My first advice would be… get a slow cooker 😉 , but I'm slightly biased because I like that thing so much. Anyway, do you want to make the chili in the pan? Then it goes something like this:
Brown the minced meat in a pan, add the tomato puree and the garlic. Then add the vegetables and all the spices. Finally, add the diced tomatoes and beans. Let it simmer for about 1.5 hours and it's ready. If you are short of moisture in the meantime, you can add a little.
You can serve the chili con carne in different ways. This time we did this with a pita bread, but you can also serve it with rice. A big dollop of crème frache and some grated cheese also makes it very tasty, by the way. And then only nachos on the side, success guaranteed, also with your children!
