Sweet potato soup for the slow cooker

Not so long ago I published a sweet potato soup recipe that is 'just' made in the pan instead of in the slow cooker. A reader gave me this recipe and I recently decided to make my own sweet potato soup in the slow cooker. Because the regular sweet potato from the slow cooker was so good. For the enthusiasts (and you can rest assured because it was very tasty) here is the recipe for this delicious soup for the slow cooker.

Ingredients sweet potato soup slow-cooker soup (4-5 people)

  • 2 large onions
  • 4 cloves of garlic
  • 3 sweet potatoes
  • 2 winter carrots
  • 1 red (pointed) pepper
  • 1 red pepper
  • little parsley
  • 1 liter stock
  • salt and pepper to taste

How-to-prepare-sweet-potato-soup-in-slow-cooker

I actually start by frying the onions and the like in a pan, because I think the flavors come out even better then. But you can also just do it all in the slow cooker without browning it.

  • Chop the onion
  • Crush the garlic
  • Cut the red pepper in half, remove the seeds and then cut the red pepper into small strips
  • Fry the onion, red pepper and garlic briefly in a pan
  • In the meantime, cut the sweet potatoes and the carrot into cubes
  • Cut the bell pepper into pieces
  • Add the carrot, sweet potato and bell pepper to the pan and stir-fry for a few minutes
  • Put everything in the slow cooker and add the stock and chopped parsley
  • Set the slow cooker to low for 5 hours
  • At the end, just add the industrial stick blender and you're done

Enjoy your dinner! By the way, it is very nice to spice up the sweet potato soup from the slow cooker by sprinkling coriander over it.

By the way, I still had some left over from the sweet potato soup that we ate for lunch the next day. I like to do that in the context of eating easy and healthy potatoes, storing leftovers and saving on groceries. Eating leftovers for lunch 😉 . This sweet potato soup from the slow cooker was even tastier the next day. I only added a little extra boiled water because the soup had thickened a bit.

Make sweet-potato-soup variations

As mentioned, this sweet potato soup is very tasty, but you can of course vary a bit with what you already have at home. For example, you can make a delicious variant of this soup with a pack of coconut milk and basil through. Or you bake some bacon strips that you serve over it at the last, also very tasty!
