Nasturtium salad with "Ibaïona" ham

  • balsamic vinegar
  • softened semi-salted butter

  • nasturtium flowers

Wash and drain the batavia, set aside,

Cook the hard-boiled eggs, leave to cool then peel them and cut them into slices

Remove the rind from the ham and cut it into not too thin strips, put the rind in a pan, let it melt, then remove it, in the rendered fat, sauté the ham

Arrange the lettuce, tomatoes and hard-boiled eggs on plates or a serving platter

Add the pieces of ham, deglaze the pan with a dash of balsamic vinegar and pour over the boiling pieces of ham.

Arrange the nasturtium flowers on the salad.

Note:when preparing the salad, plan a vinaigrette to season it.

Nasturtium butter:

In a container, stir the butter with a wooden spatula until you get a frothy consistency

Chop nasturtium flowers and chives, mix with the butter

Spread on a sheet of aluminum foil or cling film, then roll to obtain a sausage

Leave in the cold for at least two hours.

Accompany this salad with croutons topped with nasturtium butter.

At the moment you cut washers

You can also reserve this butter for another use such as:to put on a steak, or potatoes or even a fillet of fish.
