Baby spinach and shiitake mushroom salad with bacon and garlic croutons

  • Baguette of bread

  • Shiitake mushrooms
    220g
  • Corn seeds
    150 g
  • Bacon cut into thin slices
    350 g
  • Garlic
    1 clove
  • Balsamic Vinaigrette

Cook the soft-boiled eggs (5 minutes from boiling), peel them, cool them under cold water, set aside •

Wash and spinach the baby spinach.

Mince the bacon, also mince the mushrooms.

Cut slices of bread into the baguette, toast on the grill then rub with a clove of garlic.

Arrange the baby spinach on a plate, arrange the different elements harmoniously with the lightly incised soft-boiled egg in the centre.

Add the garlic croutons.

Serve with a Balsamic Vinaigrette in a Sauceboat.
