Shell the prawns, keeping the tail intact.
Crush the chopped coriander stalk, the coriander seeds, the green pepper and the garlic in a mortar. Put everything in a dish with half the oil, then add the prawns and stir to coat them with this mixture. Leave to marinate for at least 3 hours in the refrigerator.
Heat the remaining oil in a wok and sauté the prawns over high heat until cooked through and nicely pink.
Remove from the heat and add the bean sprouts, chopped coriander, fried garlic and shallot.
Garnish with coriander leaves and serve immediately.
Buy fresh coriander stalks from Asian grocery stores, reserve the leaves for the sauce, and wash the stems and roots before chopping them for garnish.
Fried garlic and shallot are very important ingredients in Thai cuisine. You can also find them in Asian grocery stores or prepare them yourself.
