For 6 people:
- 2 granny smith apples
- 1 sea bream of 800 g
- 125g quinoa seeds
- 1/2 stalk of celery
- juice of a lemon
- 1/2 bunch of fresh cilantro
- olive oil
- Salt and ground pepper
Development:
- Fillet the sea bream and remove the skin and bones.
- Cook the quinoa seeds in salted boiling water for 10 to 15 minutes (1 part quinoa to 2 parts water). Leave to cool
- Cut the apples into quarters, remove the seeds and cut the flesh into small cubes, keeping the skin on. Sprinkle them with half the lemon juice
- Cut the sea bream into small cubes and the half stalk of celery into thin strips
- Prepare the dressing by mixing the remaining lemon juice with 4 tablespoons of olive oil. Salt and pepper from the mill
- Just before serving, mix all the ingredients, sprinkle with chopped coriander and season
- Present in verrines.
