Summer salad with lavaret in curry marinade


Ingredients:4 people
  • whitefish fillets
    12 x 50 g
  • salt
    2 teaspoons + ground pepper
  • shallots
    4
  • white wine
    600 ml
  • white wine vinegar
    200 ml
  • curry
    2 teaspoons
  • bay leaf
    1 leaf
  • cold pressed olive oil
    200 ml
  • summer salad
    80 g


Preparation:
  • 5 days for the marinade
  • Preparation time:approximately 45 minutes


Salt and pepper the whitefish fillets, cover them with transparent film and put them in the refrigerator for 1 day.

The next day, peel the shallots and cut them into rings. Put them in a casserole dish with the white wine, curry and bay leaf. Salt and pepper. Bring everything to the boil and reduce by a third.

Leave this marinade to cool a little, then add the olive oil.

Cover the bottom of a Pyrex mold with a little marinade. Place the whitefish fillets in the mold and continue to pour the marinade over the fillets.

Cover and marinate for 4 days in the refrigerator.

After this time, sort, wash and spin dry the lettuce. Take the mold out of the fridge. Take the excess marinade and sprinkle the salad with a few tablespoons.

Arrange the salad on the plates. Place the whitefish fillets – cold or warm (heated on the grill) – on the salad and serve.
