Finely chop the ham.
Boil 20 cl of water with the hazelnut butter, salt, pepper and a pinch of grated nutmeg. When boiling, add the flour all at once and stir vigorously with a wooden spoon until the dough comes away from the sides of the pan.
Off the heat, add the cheese and the chopped ham. Mix. Add the eggs one at a time, stirring well between each. Pour into a bowl, cover with a cloth. Leave to stand for 1 hour.
Heat the frying oil to 180°C.
Using two spoons, take balls of dough the size of a small egg, and put them in a frying basket. Immerse it in hot oil for 5 minutes. When the donuts are puffy and golden, take them out and drain them on absorbent paper.
Repeat the process until the dough is used up. Serve immediately.
