Sin in a healthy way? This is possible with these whole grain kiwi cookies dipped in dark chocolate. That's a lot of fun!
Ingredients
For 12 cookies
- 4 Zespri Green kiwi
- 100 g dark chocolate
- 140 g wholemeal flour (+ extra for dusting)
- ½ tsp baking powder
- 75 g cold butter
- 20 g cane sugar
- 1 pinch of salt
- 30 ml cold water
- 1 tbsp agave syrup
- 1 tsp vanilla extract
- 1 tbsp milk (to brush the cookies)

Preparation method
- Heat the oven to 160 degrees. Mix the flour with the sugar, baking powder and salt. Cut the butter into cubes and stir into the mixture until crumbs form. This can also be done in the food processor.
- Now add the water, vanilla extract and agave syrup and knead until it becomes a soft dough. Dust with some flour and wrap in foil. Now let this rest for 30 minutes in the fridge to firm up.
- Dust the work surface with flour, roll out the dough to about 1-1.5 cm thick and cut out round cookies, about the size of a slice of kiwi.
- Use the milk to brush the cookies and bake them on a baking tray in the oven for 18-20 minutes.
- Meanwhile, melt the dark chocolate in a bain-marie and cut the kiwi into slices of about 1-1.5 cm thick.
- When the cookies have cooled completely, you can start stacking. Biscuit – kiwi slice – biscuit. Now dip half of it in dark chocolate and place on a baking paper so that the chocolate can harden. Enjoy your meal!
