Weekly menu Tuesday:broccoli soup

Women need more iron than men. Do you exercise a lot, are you on your period, pregnant or vegetarian? More reasons to keep a close eye on your iron. This menu certainly succeeds. Tuesday:broccoli soup with cashew.

BROCCOLI SOUP WITH CASHEW CREAM FOR 2 PEOPLE

INGREDIENTS 2 shallots, finely chopped • 1 broccoli, florets • 1 L vegetable stock • 150 g soaked unroasted cashew nuts (soak the night before) • 1 glass unsweetened almond milk

• 1 tbsp spicy mustard

PREPARATION Heat some olive oil in a soup pot and fry the shallots. Add the broccoli florets and fry for a while. Add the vegetable stock until the broccoli is submerged and slowly bring to the boil. Meanwhile, make the cream in your blender by mixing the soaked cashew nuts (water drained), almond milk and mustard until smooth. Puree the soup with an immersion blender when the broccoli is soft. Add the cashew cream and let it simmer for a while while you stir. Serve the soup in bowls.
