Preparation
Once the asparagus is clean, cut it into sections, discarding the end corresponding to the end of the asparagus.
Peel your small onion, then chop it into large chunks. Then finely chop the coriander.
Pour the vegetable broth into a saucepan, before adding the asparagus and onion. Bring to the boil, then simmer until the vegetables are cooked through (about 5 minutes).
Drain, and let cool. You can then mix the mixture with the robot. Add cilantro and lemon juice.
In a separate container, beat the eggs until stiff, accompanied by the powdered sugar. Gently fold them into the mixture. Add salt as desired.
Place everything in your freezer until the ice cream has hardened.
