Grate the cucumber and let it drain by wringing it out with a clean cloth.
Add to the grated cucumber the crushed garlic, the chopped mint, the chopped coriander, the juice of half a lemon, the yoghurts, the olive oil, the salt and the pepper. Mix well and refrigerate for several hours to serve very cold.
To be served as an aperitif or as a starter with blinis, raw vegetables (cauliflower, radish...)
