For 4 people:

80 ml vegetable oil, 1 large white onion, cut into very thin strips,
2 cloves of garlic, cut into thin strips, 4 fresh red peppers, minced,
1 kg pumpkin flesh cut into cubes, 250 g snow peas,
1 tsp grated palm sugar or brown sugar, 60 ml vegetable stock,
2 tbsp soy sauce, 1 small bunch purple basil,
4 sliced green onions, 75g unsalted roasted peanuts.
- Heat the oil in a wok. When it begins to simmer, fry the onion strips in batches until golden brown. Drain on absorbent paper.
- Then cook the garlic and peppers in the same wok until fragrant, then add the pumpkin pieces. When they are almost soft and golden, add the snow peas, sugar, broth and soy sauce. Stir briskly over the heat until the snow peas are cooked, they should remain a little crunchy.
- Remove the wok from the heat and stir in the basil, onion and peanuts. Mix and serve immediately, garnished with fried onion strips.
