With my express recipe for tomato and pepper gazpacho, it's super easy to make.
All you need for this easy recipe is 15 minutes flat. Watch:

Preparation:10 min – Cooking 5 min
Red peppers: x 2
Cucumber: x 1
Olive oil: 6 tablespoons
Crushed tomatoes: 800g
Vinegar: 4 tablespoons
Cherry tomatoes: 200g
1. Remove stems and seeds from peppers.
2. Put them in boiling water for five minutes.
3. Peel the cucumber, remove the seeds and dice it.
4. Mix all the ingredients in a blender, except the cherry tomatoes.
5. Cut the cherry tomatoes in half and add them.
6. Salt, pepper, chill.
There you go, your homemade gazpacho is already ready :-)
It's quick and easy, isn't it?
And besides, it's delicious and refreshing, especially in summer.
