Gazpacho is a cold soup of Spanish origin ideal to serve in summer .
Traditionally made with tomatoes and peppers, it is also very economical.
Here is its express version for amateurs in a hurry!
- 1 kg of tomatoes
- 1 cucumber
- 1 green pepper
- 1 red bell pepper
- 2 cloves of garlic
- ½ teaspoon of balsamic vinegar
- 2 tablespoons of olive oil
- Salt and pepper
Preparation time:20 min
1. I wash my tomatoes, remove the peduncle from each with a sharp knife and plunge them for 20 seconds in a pan of simmering water so that their skin comes off easily.
2. I quarter them, remove the seeds and place my peeled and seeded pieces in a blender.
3. I peel my cucumber, slice it lengthwise, remove the seeds and cut it into small dice.
4. I seed and dice my peppers, peel my onion and garlic. I slice my onion and coarsely crush my garlic.
5. I put all my cut ingredients in my blender, pour my olive oil, my vinegar then I salt and pepper.
6. I mix everything to obtain a very homogeneous mixture at low speed at first then at higher power afterwards.
7. I correct my seasoning if necessary and refrigerate for at least 1 hour.
I serve my gazpacho chilled in soup plates or verrines.
For a nice dressing, I place a few fresh mint leaves on top of my preparation. Basil also goes perfectly with gazpacho.
- Are you in a hurry? Last-minute guests arriving? Place your preparation in the freezer for 30 min so that it cools more quickly:your gazpacho is served very cold! You can also add a few ice cubes when serving.
- For the preparation of your tomatoes, do not forget to immerse them immediately in a salad bowl of cold water as soon as you take them out of your pot of simmering water to stop them cooking.
- If you are always in a hurry:Prepare a large quantity of gazpacho and freeze what you won't need right away. You can take it out when you have last-minute guests or don't feel like cooking.
