Forgotten vegetables:parsnips

Parsnips used to be eaten just as much as potato. Now that is no longer the case, which is why parsnips are sometimes called a 'forgotten vegetable'. Time to put parsnip back on the menu.

Features
Parsnip looks like a big creamy carrot. The taste is also somewhat like carrot. If you store parsnips in a dark and cool place, they will keep for about 2 weeks. 100 grams of fresh parsnip contains about 80 kcal.

What can you make from parsnips?

Stew
Passnip was an ingredient in stew as it was eaten during the Relief of Leiden in 1574.

Soup
Make a delicious parsnip soup or use a little parsnip as a taste refiner.
