Pumpkin, cabbages of all kinds, leeks and carrots are regulars in your pantry and are an integral part of your recipes in winter . Do you forget anything? Our poor forgotten vegetables have been over time because they were difficult to grow, their preparation was not easy and new, more productive vegetables drove them from our plates. The parsnip for example, was the equivalent of potato in the Middle Ages, but the latter somewhat eclipsed it.
Theseroot vegetables yet have many advantages:more resistant to frost and insects, they keep for a very long time and have interesting nutritional properties , many fibers and vitamins.
Fortunately, after a long period of shelving, they are making a comeback in the kitchen, largely thanks to their reintroduction into the recipes of great chefs .
Your usual recipes are surely delicious, but we bet that you very often find yourself eating the same thing and that your palate is calling for new tastes . What if you step out of your comfort zone? These well-cooked vegetables from yesteryear will give you a great opportunity to surprise your guests with their original flavors and their sometimes disconcerting textures .
Soft and sweet, the parsnip can be eaten with apples in a velouté or in an Asian wok. The chervil tuberous , unknown to the general public, has a very fine taste reminiscent of chestnut and can be cooked like carrots or Jerusalem artichokes . For an original starter, serve it tarte tatin. Prepare the rutabaga au gratin or try the salted flognarde, the opportunity to discover a specialty in addition to a new tuber .
And if your good resolution to be more culinary-wise cannot wait, go try the hummus with Jerusalem artichoke, parsnip and rutabaga to kill three birds with one stone.
