Spicy vegetables


Ingredients:1 large jar

  • red peppers

  • green peppers
    100 g
  • white onions
    100 g
  • carrots
    100 g
  • small green tomatoes
    100 g
  • cauliflower
    100 g
  • celeriac
    100 g
  • cucumber

  • bay leaf
    2 leaves
  • garlic
    1 clove
  • bird pepper
    1
  • black peppercorns
    1 teaspoon
  • coarse sea salt
    1 teaspoon

Peel carrots, onions, garlic. Clean the cauliflower and tear off small florets. Remove stems and seeds from peppers. Remove the seeds from the cucumber. Cut the peppers into strips, the celery and the cucumber into sticks. Leave the onions and small tomatoes whole.

Place all the vegetables in a large, very clean, dry glass jar.

Add the garlic clove, chilli, salt and herbs. Pour the vinegar over everything.

Close hermetically with a cork or glass stopper and leave to marinate for about 1 month in a cool, dark place.

Serve as a condiment with cold meat dishes, charcuterie or fish.
