Ingredients
For the bottom:
85 g vegetable (cream) butter
30 Oreo Cookies
For the filling:
400 ml coconut milk
275 g dark chocolate (85% cocoa solids), cut into pieces
4 tbsp agave syrup
pinch of salt
To garnish
Oreo cookies, finely chopped blackberries
Preparation
- Melt the vegetable (cream) butter in a saucepan over medium heat.
- Put the Oreo cookies in the food processor and grind them into crumbs in a few minutes.
- Add the melted vegetable butter and mix well.
- Spread the mixture over the bottom and edges of the cake pan. First press the sides well and make sure you have an edge of half a centimeter thick. Work your way towards the center of the cake and press everything well with your hands. Place the mold in the fridge while you make the filling of the cake.
- Heat the coconut milk in a pan over medium heat. Add the pieces of dark chocolate to the coconut milk. Stir the chocolate into the coconut milk.
- Add the agave syrup and salt and mix well.
- Turn off the heat when the chocolate has melted and you have a smooth mixture.
- Pour the filling carefully into the cake tin. Place the cheesecake in the fridge and let the cake set for at least 4 hours.
- Garnish the cake with chopped Oreo cookies and fresh blackberries.
