INGREDIENTS
- 250 G MINCED MEAT
- 12 LARGE PARIS MUSHROOMS
- 2 SMALL TOMATOES
- 200 G OF MESCLUN
- 1 ONION
- 30 G BUTTER
- 5 TABLESPOONS OLIVE OIL
- 1 TABLESPOON BALSAMIC VINEGAR
- 1 TABLESPOON SESAME SEEDS
- SALT AND PEPPER
PREPARATION
- Wash and spin dry the mesclun. Peel and chop the onion. Rinse the tomatoes and mushrooms under running water. Wipe and chop the former, then rinse and dry the latter, cut off the stems and hollow out the caps. Emulsify 4 tablespoons of oil with vinegar, salt and pepper.
- Mix the minced meat and half the minced onion. Shape 6 mini steaks with this mixture. Cook them for 2 minutes on each side in a very hot pan with the butter and the remaining oil, then season. Meanwhile, dry roast the sesame seeds in a saucepan.
- In 6 plates, divide some of the mesclun drizzled with vinaigrette and place on top a mini-burger assembled as follows:on a mushroom turned over, place mesclun, minced onion, a slice of tomato, a steak, then cover with a hat. Sprinkle with sesame and serve.
